Here’s the recipe for Mike’s Camp Stew that many of us enjoyed at the flying field last week. Thanks Mike!
Juanita’s camp stew was a camp favorite in the dust bowl migration. According to her, anything and everything went into the pot. fresh, canned, pickled, dried or wiggling.
1 lb. ground beef (optional)
1 can whole kernel corn drained
1 can black beans drained
1 can red kidney beans
1 can Rotel tomatoes with chilies
1can Rotel tomatoes with tomatillos and lime
1 28 oz can diced tomatoes
1 package taco seasoning
1 package Hidden Valley Ranch dip
1/2 cup water
2 diced onions
peppers or cayenne to suit
Mix it all together and simmer till it reaches the consistency you wish.
Serve with Tortillas and hot sauce
